Commitment to Ingredients
All of the Kuruma family's ingredients are carefully selected by region of origin.
I have been using it.
For example, the seasonings are three-year aged soy sauce made by Marunaka Soy Sauce, a company that has believed in the same production methods, safe ingredients, and no additives since the Edo period.
The dried bonito flakes, kelp, mirin (sweet sake), sugar, and other ingredients are all similarly carefully selected.
In Tokyo, where many people from the countryside have moved to, what can we do to help our customers through our traditional soba restaurant...? This is the story of the Kuruma family, which has been in business for more than 50 years, and the background and thoughts that led to the restoration of the Meguro Family Minka.
